WHere is an easy interpretation of a beverage found on our latest menu. It's a party-sized premix that's packed with the tastes of the Christmas time, rendering it perfect for your celebration. Save the extra citrus syrup you can use for brunch beverages, sweets, or for more rounds of the drink.
The Bikini Cocktail
Makes enough for 10 servings
Ingredients for the Citrus Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
For the Drink (produces 850ml, to serve 10)
400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
For the Cordial: Combine every ingredients in a saucepan, heat until it reaches a simmer, mixing to dissolve. Then, take off the burner allowing it to reach room temperature completely. Pour to a clean bottle, cap it and store chilled, it will last for up to one month.
Preparing the Batch Mix: Combine the specified spirits and syrup into a sizeable container, leave to sit for 60 minutes, then strain preferably using a fine cloth, so it's fully clarified.
When ready to serve: Pour 85ml of the premix into your mixing glass packed with ice, and stir carefully for one minute until cold. Filter into a frosted cocktail glass or equivalent, garnish with the cranberries and complete it by giving it a quick spritz of the essential oil over the drink.
